Spent the morning on a race out to the Chirripo region, up and over the mountain and to the south of Tarrazú. Through a bit of fog and mist and then it breaks open to a beautiful blue sky over the valley below. We barrel down to the Los Crestones Micromill where some surprises await. They’ve built tiered, raised drying beds and they’re doing a overnight soak of the mechanically washed parchment.
